Ingredients: (the amount is relatively large, it is recommended to reduce the amount by half) 500g flour, 5 eggs, 350g sugar, 150g maltose, 50g butter, 350g water, 20g black sesame seeds, 100g raisins

Put the flour in a container and beat in the eggs

Knead into dough, wrap in plastic wrap and leave for 30 minutes

Roll the dough into thin sheets (you can roll it into several portions)

After sprinkling a layer of starch on the surface, roll the dough sheet on the rolling pin

Cut it in the middle with a knife

Cut into thin strips

Flush backup

Pour an appropriate amount of oil into the pan and heat it up, then put a small handful into the pan (it will become fluffy after frying, so fry a little less at a time)

Fry until the surface is slightly brown, then remove and drain

Take another pot, pour in water and sugar and simmer over low heat

After the sugar is dissolved, add maltose

Finally add butter

Keep simmering over low heat until you can pull out the sugar strands when you pour it with a spoon, then turn off the heat

Quickly pour the noodles, sesame seeds, and raisins into the pot, stir-fry evenly, and coat the noodles with syrup

Pour into a baking pan lined with greaseproof paper, cover the surface with another layer of greaseproof paper, put on insulation gloves, and press firmly

Cut into pieces and serve (preferably with a serrated bread knife)
