Remove the gills and internal organs of the hairtail fish, wash and cut into sections, put it into a large bowl, add all the seasonings, mix well and marinate for 30 minutes.

Rinse the hairtail and dry it with kitchen paper towels, put it on a large plate and sprinkle it with starch, shake off the excess starch and set aside.

Take a deeper pot, pour half of the cooking oil into it and heat it up.

Fry the hairtail until slightly brown, take it out, heat the oil in the pan, fry the hairtail again until crispy, take it out and drain the oil.
