  5. Peel tomatoes and cut into cubes.

  6. Heat oil in a pan and sauté ginger and garlic until fragrant.

  7. Add beef and stir-fry until it changes color slightly.

  8. Add the potatoes and half the tomatoes and sauté.

  9. Pour in white wine with a frying spoon, pour 3 bowls of water, add oyster sauce, light soy sauce, dark soy sauce, sugar, bring to a boil over high heat, then turn to medium to low heat and simmer for 1 hour. Cook until beef is tender.

  10. Add the remaining tomatoes and cook for 5 minutes, reduce the juice slightly over high heat, but do not reduce it too dry
