Remove the roots from the shiitake mushrooms, wash them, and cut each into four pieces

Cut tomatoes into pieces

Chop onion, ginger and garlic

Cut the tofu into square pieces (the tofu I bought today is a bit soft and not very firm, but it doesn’t matter)

In a small bowl, add two spoons of light soy sauce, two spoons of cooking wine, one spoon of vinegar, one spoon of sugar, one spoon of oil, and appropriate amount of salt and mix well

Heat the wok, add an appropriate amount of vegetable oil, the oil is 80% hot, add the tofu, do not shovel it first to avoid breaking it, wait for one side of the tofu to turn brown and set before turning it over

Brown both sides and set aside

Sauté the onion, ginger, garlic, peppercorns and star anise in the oil in the pot

Add the mushrooms and stir-fry for a minute or two

Add tomatoes and stir-fry

Pour the seasoning into a small bowl and stir-fry

Put a small bowl of water, add tofu, stir-fry evenly, bring to a boil over high heat, and consume less soup

Finally, add a spoonful of starch and some water and mix well, pour it into the pot and stir-fry evenly, turn off the heat and remove from the pot
