Bought three-layer pork belly

Cut into chunks, not too small as the meat will shrink.

In a basin, put the sliced pork belly, green onions, ginger powder, cooking wine, and pepper aniseed packets.

Take out the meat, heat oil in a pan and fry sugar.

The sugar discolors the meat. (Pick the meat out of the solidified soup and put it on a plate. The soup keeps simmering...high heat, reduce the soup and add salt.

Add less oyster sauce to the soup. Stir fry evenly. Be gentle when stir-frying and the meat will break up. There's big bubbles in the pot and it's a little sticky. Reduce the heat to medium-low because the sugar is starting to take effect. .

Finally, use high heat to reduce the juice. When the juice is reduced, stir-fry the meat to make the color uniform.
