Cut the green onion into small pieces and the ginger into large pieces.

Pour a small amount of hot water and soak for a while to make scallion and ginger water. When making meatballs, you cannot directly mix the chopped scallions into the filling, because the chopped scallions will turn black after high-temperature frying and affect the appearance, so I always use the soaked scallion and ginger water and stuffing.

Add an egg white, a small amount of starch, five-spice powder, salt, cooking wine, light soy sauce, oyster sauce, and sesame oil to the meat filling and stir in one direction.

Stir the seasonings well and add onion and ginger water depending on the wetness of the meat filling.

Continue stirring in one direction until stiff

Shape into small meatballs

Knead everything and set aside.

Mix one spoonful of starch with three spoons of onion and ginger water and mix well. Add one spoonful of light soy sauce, half a spoonful of dark soy sauce, one spoonful of sugar, half a spoonful of vinegar, and one spoonful of tomato sauce and mix thoroughly.

Pour more oil into the pot, and when it is 50% hot, change to medium-low heat and add the meatballs.

Put them all into the pot and fry until the outside is slightly brown. Take it out. Use medium-low heat for the first frying to fry the meatballs.

Change to high heat, and when the oil temperature rises to 80% hot, add the meatballs and fry again until the outside becomes golden, then remove and control the oil. The second time of high heat frying is to crisp up the outside of the meatballs.

In another pot, add a small amount of oil to sauté the onions and garlic, then add the meatballs, add cooking wine and a small amount of water to prevent the pot from drying out.

Pour in the seasoning sauce, stir-fry until evenly coated and serve.

Wash the broccoli and cut it into small florets in advance, blanch it in light salt water and cool it, then arrange it in a circle around the plate. I didn’t add vegetables to the meat filling. The broccoli is greasy, and it is also delicious when dipped in the meatball soup.
