Hanamaki Manju
Overview
I am from the north. When I have porridge or porridge for dinner, I have to eat some steamed buns or steamed buns to feel full. The ones sold outside always feel that they are not as chewy and hygienic as the ones I make myself. Occasionally, when I have time, I give out some noodles and make a pot of noodles that a family of three can eat for three or four days

The first step is to make the dough. I always use Angel yeast powder for a family of three, which lasts for three or four days. Use the spoon of the rice pot to take four tablespoons of the flour. Then dilute the yeast powder with warm water around 35 degrees, stir well, and slowly pour into the flour. Use chopsticks to make circles to stir into floc, then knead evenly until the surface is smooth. Cover the pot with a plate and let it sit for about 2 hours until it doubles in size (I forgot to take a picture, so I will provide it to you next time)

In the meantime, chop green onions and fry sesame seeds

When the dough is proofed, I usually work on the tempered glass dining table at home. I first sprinkle a layer of flour on the table, pour the dough out of the basin and knead until the pores shrink (when kneading the dough, it is best to knead the dough in one direction and not in all directions to avoid affecting the secondary fermentation). Cut out a piece and roll it into a long shape with a rolling pin

First brush a layer of oil on the dough piece, then spread a thin layer of minced green onion (the chopped green onion has been marinated with salt and thirteen spices for a while) on the rolled dough piece

Sprinkle a layer of sesame seeds

Roll it up in the rectangular direction

Cut into small sections with a kitchen knife

Take out two pieces and pinch them together

Apply a layer of oil on the steamer without a cage cloth to prevent it from sticking, and then arrange it neatly to leave a gap for expansion

After placing it, let it rest for about 15 minutes, then start the stove with cold water, high heat for 20 minutes, and low heat for 15 minutes
