Bean dregs and green onion crispy cake
Overview
The leftover bean dregs from making tofu were used to make vegetarian meat floss. Today, I mixed it with scallion oil and spread it on the dough to make pancakes!

Chop onions and chives

Heat a pan, add oil, add chopped onions and fry until fragrant, then add chopped green onions

Slowly fry the fragrant scallion oil

While the oil is hot, pour the hot oil into the bean dregs. My bean dregs are made in advance

Add chopped green onions and mix well and set aside

Take a large bowl and put flour

Pour warm water into the flour and stir into large snowflakes

Knead the dough vigorously until the surface is smooth, cover with plastic wrap or a clean bowl and rest for 20-30 minutes

Take out the dough and roll it into a long strip

Divide into appropriate sized portions, I divided into 6 equal portions

Use a rolling pin to roll it out, making it as thin as possible

Brush the rolled out cake with scallion oil

Roll up the dough from one end of the dough, and then shape it into shape

Take a clean knife and cut the newly rolled pie crust in half

Put the two pieces of cut dough together, with the cut sides facing up, and roll it out gently with a rolling pin. Don't use too much force, otherwise it will compact the dough and affect the layer and texture of the cake
