Steps
-
Prepare the ingredients, cut the mutton into whole pieces after draining the water, cut the carrots and water chestnuts into small pieces, and slice the ginger
-
Heat a pan, add oil, add ginger slices and lightly sauté
-
Add mutton and stir-fry
-
Stir-fry until the mutton changes color and add white wine. I added two caps of white wine to this lid. The stir-fry process should be over high heat
-
Add appropriate amount of salt
-
Add salt and stir-fry, then add soy sauce
-
Add water chestnuts and continue to fry
-
Add boiling water, just enough to cover the mutton
-
Cover the pot and simmer over low heat. Originally, I was going to switch to a clay pot here. There was too much mutton and the clay pot was too small, so I had to stew it here. It is best to stew in a clay pot

Fry the carrots and mix well
-
Add the carrots, cover the pot and simmer for 20 minutes. This is done
-
Put it in the clay pot and simmer for another 10 minutes
