Eggplant box
Overview
I love eating eggplants, especially fried eggplant boxes, but fried food is not healthy, so I can only satisfy my craving occasionally! I changed the past fillings and tried wild vegetables, mushrooms and pork. It’s still very fresh!

Cover the wild vegetables, chop into fine pieces and set aside

Do not cut the round eggplant into segments with the first knife, but cut it into pieces with the second knife, as shown in the picture

Grind the pork into minced meat, mix with washed mushrooms, add soy sauce, five-spice powder and salt and marinate for 10 minutes

Mix wild vegetables and make stuffing

Sandwiched between eggplants

Stand on a plate and set aside

Prepare the batter

Completely coat the eggplant box with batter

Place in the eggplant box and fry until golden brown on both sides
