  1. Clean the ribs and chop them into small sections, cut the green onions into sections, slice the ginger, and cut the chives into small sections;

  2. Prepare seasoning: put vinegar, dark soy sauce, light soy sauce and sugar into a small bowl, mix well and set aside;

  3. Add cold water to the pot, add chopped spareribs, green onions, ginger slices, star anise, cinnamon bark, bay leaves, cooking wine, and salt. Bring to a boil over high heat and skim off the foam. Reduce the heat and cover the pot until the ribs are cooked. Remove the ribs, drain the water, and set aside;

  4. Heat the oil in a pan, add the prepared seasonings, add the cooked ribs, stir-fry until the soup coats the ribs and is completely colored, put it into a plate and sprinkle with cooked white sesame seeds and chives.
