Remove the internal organs from the croaker and clean it.

Cut the onion into sections, peel and slice, prepare garlic and star anise.

Lightly coat both sides with flour and prepare for frying.

Put oil in the pot and sprinkle a little salt to avoid sticking. After the oil is hot, put the croaker into the pot and fry one side for a while until it takes shape. Fry the other side until both sides are browned and take it out for later use.

Put oil in the pot, then add onion, ginger, garlic and star anise and stir-fry until fragrant.

Then add Pixian bean paste, stir-fry the red oil, add light soy sauce, cooking wine, white sugar and a little water and bring to a boil.
