Red velvet glutinous rice dumplings
Overview
I really like eating food made from glutinous rice, which is soft, sticky and elastic. Suddenly I remembered that I had never used the red yeast rice I bought last time. As a food dye, red yeast rice has the advantages of being non-toxic and safe, and it also has the effects of strengthening the spleen, digesting food, activating blood circulation and removing blood stasis. So today I’m going to make a creative version of glutinous rice dumplings. If I can’t think of the filling, I’ll just use mashed potatoes, minced Oreo biscuits, and condensed milk. There was still room for the cooked glutinous rice flour when I made it last time. Just make it, it’ll be delicious just thinking about it.

Soak the red yeast rice in about 200ML of boiling water until the color develops (it’s best to use heated milk, as this will produce a strong milky aroma). After a few minutes, filter and remove the residue, add white sugar and stir until the sugar melts

After the red yeast rice water is cooled, slowly pour it into the glutinous rice with corn starch, stir until there are no grains, add cooking oil and continue to stir evenly.

Wash and cut potatoes into cubes

Steam the potatoes and the mixed batter in a steamer over high heat for about 20 minutes (the time depends on the quantity)

Add the mashed potatoes and biscuits to the condensed milk and stir evenly (for filling). Stir the steamed glutinous rice balls as well (the glutinous rice balls are very sticky, so it is best to wear disposable gloves and apply cooking oil) and let them cool quickly.

The glutinous rice dough is very sticky. Dip kitchen paper in cooking oil and rub it on the plastic wrap. Then take a small group of glutinous rice dough and press it into a dough shape with plastic wrap. Put the mixed fillings on top and wrap it into a round shape. Add the prepared fried glutinous rice flour and roll it into circles (making cooked glutinous rice flour: put the glutinous rice into the pot and fry over low heat until the flour turns a little yellow).
