Pork belly goes with rice, it is fragrant but not greasy, it melts in your mouth, and the pork belly stewed with potatoes has a long aftertaste.

Soak the pork belly in water for 15 minutes, remove and drain.

Cut into cubes.

Pour in cooking wine, dark soy sauce and starch and marinate for 15 minutes.

Finely chop the chilies and garlic.

Finely chop the scallions.

Peel and cut potatoes into cubes, soak in water for five minutes, remove and drain.

Heat a pan, add a little oil, add pork belly and stir-fry, then add chili and garlic and stir-fry until fragrant.

Add water and simmer for five minutes, continue to pour in potatoes and simmer for another 15 minutes.

Add salt to taste and reduce the juice.

Remove from the pan and serve on a plate, sprinkle with some chives and serve.
