Matcha Sauce Sandwich Cake
Overview
I wanted to make macarons, but the oven is not powerful and I can't control the temperature, so it's difficult to make them. So let's switch to this simple and easy snack. The amount of the recipe is about 20 complete sandwich cookies. I think it's a bit sweet. If you don't like it too sweet, you can reduce the amount of sugar.

Beat the rock sugar into powdered sugar through a juicer and mix with the low-gluten flour. If you don't have rock sugar, you can use white sugar. There was a little almond flour left over before, so I mixed it in. In short, the total of cake flour or cake flour plus almond flour is 70 grams. It should be more delicate and smooth when made with only cake flour.

Add the sugar to the egg whites one at a time and beat the egg whites.

Beat the egg whites until stiff peaks form. When you lift the whisk, the egg whites will form a pointy hook shape that does not fall over.

Sift in the beaten powder and mix evenly with the whipped egg whites.

Gently stir until the batter is powder-free and grainy.

Use a toothpick dipped in a little food coloring to create the desired color.

Stir evenly. The mixed batter should be a spoonful of batter and the batter should flow continuously and smoothly into the basin.

Pour the mixed batter into a piping bag

Pour the batter onto the silicone baking mat so that it is rounder. After squeezing, let it sit for 1 minute and use a toothpick to pop any air bubbles.

After preheating the oven for 5 minutes, turn the heat up and down for 5 minutes, then turn down the heat for 15 minutes. Increase or decrease the time appropriately depending on the temperature of your oven. (My oven does not have a temperature display, so it is not recommended to bake over high heat as it is easy to burn)

After baking, take out the silicone baking mat and let cool before taking off the cookies.

Make matcha sauce, heat the light cream until it bubbles and boils slightly

When the light cream bubbles, pour in the matcha powder and keep stirring to prevent it from sticking to the bottom.

Add condensed milk. If you like it sweeter, you can add more condensed milk and sugar. I didn't add sugar here because the cookies are already sweet enough. The stronger tea flavor in the sandwich sauce just neutralizes the sweetness of the cookies.

Add butter and stir until butter melts.

Stir the sandwich sauce until the butter melts, turn off the heat and refrigerate for about 30 minutes until solidified.

Place the matcha paste into a piping bag. This matcha sauce has a rich flavor and is not bitter. It can also be filled with biscuits or filled puffs.

Squeeze an appropriate amount of matcha sauce onto the cake.

Take another small cake and cover it, then it's OK. Make the remaining small cakes in sequence.
