Prepare the required dishes and wash the chicken legs.

Wash the chicken legs and cut them evenly. Put the chicken legs into a bowl, add a little light soy sauce, salt, chicken powder, and cooking wine, mix well with your hands, and marinate for about fifteen to twenty minutes until the flavor is absorbed.

Pour an appropriate amount of oil into the pot and heat it to 50% heat. Add the marinated chicken legs and fry one side, then flip and fry again.

Fry the whole chicken leg until it turns golden color and it is ready to be taken out of the pan. Place the fried chicken leg into a bowl and set aside.

Leave some oil in the pot, add minced ginger and garlic, and sauté until fragrant. Pour in an appropriate amount of water, add an appropriate amount of light soy sauce, salt, sugar, and dark soy sauce, stir evenly, and bring to a boil.

Add the fried chicken legs, stir-fry until the surface of the chicken legs is evenly coated with soup, cover the pot, and simmer over low heat for 10 to 15 minutes. Uncover the pot, turn to high heat to collect the juice, add chopped green onions and stir-fry until fragrant, and it's ready to serve.
