Duck blood vermicelli soup
Overview
I had roast duck meat for lunch, and there were still a bunch of ingredients left, so I used it to make a homemade version of duck blood vermicelli soup, which is not the authentic duck blood vermicelli soup

Duck skeleton soup

Slice winter melon and potatoes as desired

Soak the vermicelli in boiling water until soft

Cut dried tofu into thick slices

Thick slices of duck blood

Bring the duck skeleton soup to a boil, remove the duck bones, and add the winter melon slices

Boil and add potato slices

Add dried tofu and bring to boil

Boil and add duck blood

Add fans

The duck blood is boiled into purple, and the vermicelli is boiled until soft

Add spinach and blanch until cooked

Turn off the heat and sprinkle some pepper

Add appropriate amount of salt to taste

Put it in a bowl with duck meat, shredded green onion, shredded cucumber, and chopped coriander. If you like it spicy, add some chili oil. If you like it sour, add some vinegar
