Place the walnut kernels in the middle rack of a preheated 180°C oven and bake for 8 minutes until golden brown. After cooling, divide evenly into two portions. Chop one portion into small pieces and grind the other portion into a coarse powder in a food processor.

Knead high-gluten flour, milk, eggs, brown sugar, salt, yeast, and walnut meal into a dough

Add olive oil and knead until expanded.

Add chopped walnuts to the dough and ferment at room temperature until 2.5 times in size

After fermenting the dough, use your palms to press out the air. Divide the dough into 6 parts, roll them into balls, cover them with plastic wrap and let them rise for 15 minutes

Shape dough into rounds and olive shapes.

Place the shaped olive-shaped dough on a baking sheet for final fermentation. After fermentation has doubled in size, use a printing mold to separate and sift the flour, put it into a preheated oven with upper and lower heat at 180°C, and bake for about 15 minutes, until the surface is golden brown and you can take it out of the oven.
