Prawn and Pearl Soup
Overview
This is a restaurant version of pimple soup. The pieces are round and shaped like pearls. When you bite it, it will feel so smooth that it will run away. It will be very elastic after you bite it. We usually don’t make this kind of pimple soup at home because it is a bit troublesome and a little wasteful because the batter will stick to the drain pan a little bit. Put the flour and starch into a basin, break in an egg, and add refined salt

Slowly add cold water, add it little by little, stir while adding water, it should be thicker, stir it with a spoon until it flows, stir evenly, and there will be no particles

Prepare a leaky basin

First prepare a basin of cold water and place it next to the cooking pot

Boil the pot until half of the water is boiled. After it boils, turn down the heat but keep the water boiling. Then sit the colander on the pot and pour two spoons of batter into the colander.

Then quickly press the batter down with your hands, and use four fingers to push the batter into a pile while pressing down again until all the batter in the drain pan is finished

Then take off the leaky basin, stir the lumps in the pot with a whisk, let the water boil for a while, drain it immediately, put it into the cold water basin, and repeatedly drain out the remaining batter. The whole action should be fast
