Stir-fried Bitter Melon Sausage
Overview
Bitter melon is native to India and is now grown in most areas of northern and southern my country. It is a very common vegetable. Bitter melon has the effects of clearing heat and detoxifying, beautifying and rejuvenating skin, lowering blood sugar and nourishing blood and liver. And the amazing thing about bitter melon is that when cooked with other ingredients, its bitterness will not be transferred to the other ingredients. It’s really a gentleman’s dish, haha. When I was a child, I didn’t like eating bitter melon, probably because my mother only made scrambled eggs with bitter melon for me to eat. Now when I cook, I find that there are many ways to eat bitter gourd. It is not only scrambled with eggs, stir-fried with soy sauce, stir-fried with chili peppers, stir-fried with meat or roasted ribs, they are all delicious. The light bitterness will turn into a magical taste and stimulate appetite, haha. So it’s not that the ingredients are not delicious, it’s that we haven’t found a suitable method for it.

The ingredients are arranged in a row: two small pieces of bitter melon, one piece of mom’s homemade spicy sausage, four small string peppers, a small piece of green onion, a small piece of ginger, and two or three cloves of garlic

First clean the bitter gourd and pepper sausages. The peppers are relatively spicy. If you are afraid of spicy food, it will be better to remove the seeds inside. Peel the ginger, peel and wash the garlic

Remove both ends of the bitter melon and cut it in half lengthwise. Use a spoon to scoop out the seeds and white pulp inside. The bitter taste mainly comes from the pulp

Slice the bitter gourd diagonally into thin slices, so that the contact area of the diagonal slices is larger and easier to absorb the flavor. Cut the pepper into small slices, cut the sausage into thin slices, mince the green onion, and slice the ginger and garlic

Add a little salt to the bitter melon slices, stir evenly, and marinate for a while

After pickling, wash the pickled bitter melon with water, squeeze out the water with your hands and set aside

Heat a pan with a little oil, add the sausage and stir-fry to remove the oil

Add green onion, white ginger and garlic slices, stir until fragrant

Add bitter melon slices over medium high heat and stir-fry for one minute

Bitter melon has been pickled with salt, which removes the bitterness but retains a little saltiness. The sausage itself is also salty, so just add a little salt, or add a little sugar to make it fresh
