Wash the pork belly, blanch it in cold water, and add some cooking wine to remove the fishy smell.

Cut into the size you like and set aside.

Heat oil in a pot. When it is 60% hot, add ginger, garlic and star anise to the pot and stir-fry until fragrant. Drain and set aside.

Pour the quail eggs into the pan with the spices and fry the quail eggs until they turn golden brown.

Add the pork belly, stir-fry until the oil is released, then add the fried spices, stir-fry until golden brown, then scoop out the excess oil.

Add dark soy sauce to color, add water just enough to cover the meat slightly, add quail eggs, cover the pot and simmer.

Simmer for about 40 minutes, add salt, sugar and green onions, simmer for a few more minutes and then take it out of the pot.
