Enoki mushrooms with minced pork in sour soup
Overview
There are a lot of enoki mushrooms left over from eating hot pot. You can’t eat hot pot often in the summer. Eat something sour to improve your appetite!

Prepare the ingredients, wash the enoki mushrooms, squeeze out the water and set aside.

Chop green onion and cut meat into small cubes.

Wash tomatoes and cut into small pieces.

Put cooking oil in the pot.

Add pork and green onions and stir-fry.

Stir-fry until it changes color, add tomatoes and stir-fry.

After the tomatoes are out of water, add a small amount of tomato paste.

Add the enoki mushrooms and continue to stir-fry. Enoki mushrooms are easy to cook and do not need to be blanched in advance.

Add a small bowl of water and bring to a boil over high heat, then reduce to low heat and simmer for 3-5 minutes.

Add oil, soy sauce, salt, chicken essence and thirteen spices in sequence.

Pour a few drops of sesame oil before serving, serve, and garnish with chopped green onion.
