Wash the pork chops and drain the water.

Put cold water in a pot, add a few peppercorns, ginger slices, star anise, grass fruit, and 1 spoon of cooking wine and bring to a boil.

Put more cooking oil in the pot and heat until slightly hot. Put the ribs into the pot and fry over medium-low heat until lightly browned.

Leave a little oil and add 2 tablespoons of sugar. Fry until the sugar turns brown.

Put the ribs into the pot and stir-fry over medium-low heat. Stir-fry until slightly brown. Until each rib is colored.

Add enough boiling water at a time, bring to a boil and turn to medium to low heat.

When there is a small amount of water in the pot, add 1 spoon of balsamic vinegar, a little chicken essence, turn to high heat and simmer until the juice is reduced.
