Clean the hairtail fish.

Slice ginger and garlic, and chop green onions.

Mix the sweet and sour sauce ingredients until evenly mixed.

Heat the oil pan, put the hairtail fish in and fry over high heat.

Fry until golden brown on both sides.

Add the ginger, garlic and scallions and sauté briefly.

Pour in the sweet and sour sauce and half a bowl of water and bring to a boil, then reduce to low heat and simmer for 10 minutes.

Reduce the juice over high heat and add the remaining chopped green onions.

Sweet and sour, delicious with rice.
