Jackfruit core stewed chicken
Overview
I originally wanted to make chestnut chicken, but I couldn't buy any chestnuts, so I made do with jackfruit cores. The taste is okay

Ingredients
Steps
-
Cut the chicken into pieces, core the jackfruit and remove the outer hard shell, cut the green onion into sections, cut the ginger into shreds or strips, and cut the pepper into sections
-
Heat oil in a pan. When the oil is hot, add Sichuan peppercorns, star anise, green onion, ginger and chili and stir-fry until fragrant
-
After sauteing, add chicken pieces
-
Fry the chicken pieces until they change color and add cooking wine or rice wine
-
Add dark soy sauce
-
Extra fresh soy sauce or light soy sauce. I personally recommend adding light soy sauce. If you don’t have light soy sauce at home, you can only use extra fresh soy sauce
-
After adding the cooking wine and soy sauce, add a little salt and stir-fry until the flavors are infused, then add the cleaned jackfruit core and stir-fry
-
Add an appropriate amount of water, bring to a boil over high heat, then turn to low heat and simmer until the flavor is absorbed. At this time, you can add an appropriate amount of salt and sugar
-
Turn to low heat and turn to high heat for about 20 minutes to reduce the juice. At this time, you can taste the soup. If there is lack of salt, add more salt. After the juice is almost collected, it can be poured out.
