Fried crab with salted egg yolk
Overview
I went to the market today and saw that the swimming crabs were very fresh. I happened to have ready-made salted duck egg yolks at home. I quickly picked out a few fat ones and went home to cook crabs.

Steps
-
Remove the gills from the swimming crab and wash it clean. Cut into two pieces, marinate them with white wine for a while, and then coat each piece of crab with cornstarch.
-
Turn on the oil pan and fry all the crab pieces until the crab shell turns red and the cornstarch solidifies. Transfer to a plate.
-
Leave a little oil in the pot, pour the steamed salted egg yolk into the pot, crush it with a spatula, and stir-fry until the salted egg yolk and oil mix into a white, light and fluffy liquid. Serve in a bowl.
-
Pour in the fried crabs just now again, add onion, ginger, wine, salt and sugar to taste, add a small amount of water and simmer for a while. When the water dries up, pour in the fried duck egg yolk. Coat the crab meat evenly with the egg yolk. The taste is salty and delicious, friends who love seafood can give it a try.
