Salad Dandelion
Overview
It rained for two weeks, and a lot of dandelions appeared in the yard. I dug up a lot of them. I tried making a cold salad first. It was delicious but not bitter. Even the children loved it.

Steps
-
Dandelions. (I couldn’t finish the whole meal, so I blanched them all and froze part of them.)
-
Remove the roots and clean them.
-
Finely mince garlic.
-
Bring a pot of water to a boil, add 1 teaspoon of salt and 1 teaspoon of sugar, and blanch the dandelions in order to remove the bitterness and keep the dandelions green.
-
Cook until dandelion is soft.
-
Remove and soak in cold water.
-
Squeeze out the water. (If you can’t use it up, you can put it in a plastic bag and freeze it.)
-
Break up.
-
Put oil in a small pot and sauté the minced garlic until fragrant.
-
Add oyster sauce, steamed fish soy sauce and 1 tea sugar and bring to a boil.
-
Pour over the dandelions and drizzle with sesame oil.
-
Mix well and serve. (If you want spicy food, you can add some chili pepper, etc.)

It is cleansing and detoxifying. It is the right time to eat it in spring. It is tender, delicious and not bitter.
