Cut the potatoes into hob pieces and fry them in a pan.

Cut the eggplant into hob pieces and sprinkle with some flour to reduce oil absorption.

To fry eggplant, you don’t need too much oil in the pan. The eggplant may absorb all the oil when you first put it in. You can pour a little less oil and use low heat until the eggplant is not mushy. When the eggplant is soft, increase the heat and all the oil that has been sucked in will be forced out. The picture shows what it looks like when all the oil is forced out.

Drain the eggplant and set aside. Pour the remaining oil into a small bowl and continue using it.

Hand-shredded green and red peppers.

Leave a little base oil in the pan. Add onion, ginger, garlic, pepper, and a little soy sauce. Pour in the green and red peppers, potatoes, and eggplants. Stir-fry for 2 minutes, add salt and chicken essence, stir-fry evenly, and turn off the heat.
