Boneless chicken thighs, cut into thin slices, tap the meat slices with the back of a knife to make it more flavorful. I cut one chicken leg into four slices. Add scallions, shredded ginger, fresh soy sauce, cooking wine, sugar, and salt, cover with plastic wrap and refrigerate for three hours.

Prepare starch, egg liquid, and bread crumbs.

Coat the marinated meat slices with a layer of starch first.

Then add a layer of egg wash.

Finally add a layer of bread crumbs.

Put an appropriate amount of oil in the pot, when it is about six or seven layers hot, add the meat slices and fry over low heat for three minutes.
