Three cups of chicken wings
Overview
I’ve been following Cook’s Tale for a long time. Every issue introduces a lot of new and delicious things. It’s too complicated to make, so most of the time I just have to watch it. Before the holiday, I saw how to make three cups of chicken wings. I thought it was not difficult. Plus, the day before yesterday, a colleague was jealous of the chicken wings made by his wife in WeChat Moments, so I bought chicken wings yesterday and started trying it today. Since rice wine is not available in the north, I use the white wine at home instead. In addition, I added a little too much sesame oil and rock sugar. I will steal a measuring cylinder from the laboratory next time, hehe. Overall, it tastes pretty good and is a success.

After thawing the chicken wings in cold water, use a knife to cut twice in front and back to drain the water.

Cut 2 slices of ginger, add 5ml of cooking wine, put in cold water and blanch. After the water boils, boil it for a while to let the blood inside completely come out.

After blanching, drain out cold water to remove blood foam and set aside. Prepare onions, ginger, garlic and rock sugar.

Rice wine: sesame oil: light soy sauce = 2:1:1. Remember the proportions and increase or decrease appropriately according to the amount of dishes. I didn't use rice wine. It's difficult to buy in the north, so I used local ingredients and used white wine, which was about half a bowl.

Pour the sesame oil from before into the pot, add the onions, ginger and garlic, and stir-fry until fragrant.

Pour into the chicken wings and fry over high heat until the surface is golden brown. What I did was just slightly yellow, maybe I poured too much sesame oil.

Pour in the white wine, rock sugar and light soy sauce in sequence, cover the pot and simmer over low heat for 15 minutes. Use a spatula to stir-fry occasionally to prevent it from burning.

Open the lid and heat over high heat to collect the juice.
