Konjac tofu miso soup
Overview
Konjac can be diced and cooked with rice, or can be made into soup or hot pot. It can reduce the conversion and intake of starch sugar (as seen on TV when I was in school in Japan).

Rinse lactone tofu and konjac into small pieces and set aside.

Remove the stems of the shallots, wash and cut into small sections, and dice the tripe.

After boiling the water, add the konjac and cook until it can be easily penetrated with a fork.

Add lactone tofu and continue cooking.

After the water boils again, turn to medium heat, use a slotted spoon to add the miso paste, and then use a small spoon to slowly squeeze and stir until the miso paste is completely dissolved in the water.

Add the diced fragrant tripe, turn to high heat, bring to a boil and then turn off the heat.

After turning off the heat, sprinkle in the chopped green onions. Do not cover the pot, otherwise the chopped green onions will turn yellow and look ugly.
