Shred the pork belly. I don’t like fatty meat so I use lean meat.

Cut the eggplant into sections first, then cut back into thick strips.

Onions, ginger, and peppers for later use

Add appropriate amount of oil to the pot, heat the oil and fry the eggplant.

The eggplant is fried and ready for later use

Leave the bottom oil in the pot, stir-fry the pork belly, and then add the onion, ginger, and chili seasoning.

After the meat is cooked, add the fried eggplant and stir-fry together. Add salt, sugar, MSG, 13 spices, oyster sauce and other seasonings.

OK, it’s ready to serve. Add two coriander leaves to garnish.
