Crucian carp with black bean sauce
Overview
My husband loves to eat fish, and I love to cook fish! After having a child, the baby inherited our hobby and likes to eat fish! Haha, now my task is not only to cook the fish well, but also to remove the fish bones. Whenever the fish is removed and put in their bowls, such a simple action represents my loving heart. Life may be dull, but I hope this warmth and simplicity will continue

Prepare the crucian carp dish and set aside (the black membrane in the belly of the fish must be removed)

Use a knife to lightly score the fish body a few times to allow the fish to absorb the flavor when cooking. Don’t score it too deeply as it may break when cooked

Add an appropriate amount of cooking wine, light soy sauce, onion, ginger, and a little bit of salt into the bowl and marinate for about 10 minutes

Add appropriate amount of oil to the pan and fry the fish

Fry both sides until golden brown

Put the fried fish on a plate and set aside

Add appropriate amount of oil to the pot and saute onion, ginger, garlic and chili until fragrant

Add black bean sauce and stir-fry

Add an appropriate amount of cooking wine, light soy sauce, pepper, sugar, star anise and bay leaf to the pot. Finally, add an appropriate amount of water to make the fish soup. Finally, put the fried fish into the pot and cook (everyone has different tastes. Add as much seasoning as you like)

Bring to a boil over high heat, then simmer over low heat to reduce the juice. When serving, sprinkle some chopped green onion for garnish
