Fish head grilled tofu

Fish head braised tofu is a Cantonese cuisine, made with various sauces and spices, and has a great taste. Quite a meal.

Main ingredients: one fish head and one box of old tofu.

Wash the fish head and cut it in half, add appropriate amount of salt and cooking wine and marinate for 10 minutes. Cut the tofu into small pieces.

Wash and cut onions, ginger, garlic and peppers.

Add enough oil to the pan and fry the tofu until golden brown on both sides.

Serve the fried tofu.

Add appropriate amount of oil to the pan and fry the fish head until golden brown on both sides.

While frying the other side of the fish head, add ginger and garlic and fry together.

Add all ingredients, light soy sauce, salt, sugar and dark soy sauce.

Finally add water and bring to a boil. (The amount of water depends on the size of the fish head. My fish head is one and a half pounds too large, so I need two big bowls)

Add water to the boil, add the fried tofu, cover tightly and cook over medium heat until the soup is semi-thick.

Add the green onions and cook over high heat to reduce the juice.

Plate the finished product and top with chili flakes before serving.
