Braised Tofu with Fish Sauce and Chives
Overview
I ate fish grilled with lemon fish sauce that day and kept the remaining fish juice. I cut the tofu into pieces and soaked it with the fish sauce in a pot for two hours. I put it in the refrigerator at night and fried it the next day. It was quite delicious.

After eating the fish, pour the juice into the pot. Cut the tofu into pieces and soak it in the pot with the fish juice for two hours. Then put the tofu and juice in the refrigerator overnight;

Cut the green onion into sections, cut the pepper into rings, and cut the ginger into shreds. Heat the pot over medium-low heat, add 2 tablespoons of vegetable oil, add the green onion sections and simmer until cooked through;

Open the pot again, add the freshly boiled scallion oil and shredded ginger, take out the tofu from the box, and slowly fry it over medium heat until golden brown on both sides;

Pour the fish sauce in the box. If it is not enough, you can heat about 3 tablespoons of water, add 1 tablespoon of light soy sauce, 1 teaspoon of fish sauce, and 1/3 teaspoon of pepper to add flavor. If the original flavor of the fish sauce is not enough, cook on medium-low for about 10 minutes;
