Cut the pork belly into a pot of cold water, add two slices of ginger, a little cooking wine, bring to a boil and turn off the heat after five minutes!

Rinse the blanched pork belly with clean water to remove the scum and control the moisture!

Heat cold oil in a pan, add 4-5 rock sugar, stir-fry until the color becomes darker, add the meat and let it color

Add dark soy sauce, light soy sauce, cooking wine, green onion, ginger, aniseed and bay leaves

Add boiling water to cover the meat, bring to a boil over high heat, then reduce to medium to low heat and simmer for 20 minutes
