Overview
Winter Love is a dish in the TV series "The Chef". Judging from the name, it should be difficult to think of this dish. It is a combination of winter melon and shrimp. Looking at this dish, everyone uses fresh shrimps to boil and then places them on top of the stewed winter melon. It tastes good. However, if you can't buy fresh shrimps, the taste of boiled shrimps will be much inferior if you use refrigerated shrimps. In Cantonese cuisine, the most important thing about boiled ingredients is freshness, such as boiled shrimp, boiled cuttlefish, sea fish soaked in water, etc. So, how to make this dish with chilled shrimp? Prepare shrimp, winter melon and other ingredients and Lee Kum Kee seasoning.

Heat the oil in the pan, sauté the ginger slices until fragrant, add the shrimp heads and shells into the pan and stir-fry for a while.

Pour up the shrimp soup cooked with the shrimp shells and set aside. Prepare an appropriate amount of stock.

Add an appropriate amount of peanut oil to the pan, heat it up, and fry the winter melon until both sides are slightly brown.

Pour all the shrimp soup into the pot, add an appropriate amount of stock, bring to a boil, then simmer over medium-low heat for ten minutes.

After the shrimps are cooked, add an appropriate amount of Lee Kum Kee steamed fish soy sauce and Tiancheng Yiyi fresh soy sauce for seasoning.
