Pork belly and lotus seed soup
Overview
My son has had a fever for several days. The fever finally subsided today, but his throat is still a little red and swollen. He made some lotus seed soup to cool down the fever.

First, wash the inside and outside of the pork belly with vinegar, and then rub it with baking soda to remove the mucus.

Scrape off the yellow part of the pork belly with a knife, and then rinse it carefully inside and out with running water.

Add water to the pot, add cold water to the pot, add ginger slices and rice wine, bring to a boil and cook for 5-10 minutes.

Cut the cooked pork belly into strips about 1cm thick.

Add water to the pressure cooker and bring to a boil, add pork belly strips and lotus seeds, add ginger slices and rice wine.

Add an appropriate amount of black pepper, cover, and after the air is released, turn to medium-low heat and simmer for about 15 minutes.

Add salt to taste.
