Wash the white jade mushrooms, remove the roots and cut into two sections. Peel the loofah and cut into pieces

Slice ginger and garlic, cut green onions into sections, and set aside one egg

Break the eggs into the pan and fry until cooked, shovel into small pieces, set aside

In a separate pan, add ginger, garlic and scallions and stir-fry over low heat until fragrant

Add white jade mushrooms and loofah and stir-fry until soft

Add an appropriate amount of water to the pot at one time and bring to a boil. Boil over high heat for one minute. Add some pepper halfway
