As the temperature gets lower, a sweet and fragrant flavor is needed. This most commonly used chiffon recipe can be transformed into many variations with just a few adjustments, such as adding blueberries, red dates, walnuts, cranberries, etc. Today, let’s talk about blueberry rolls.

Egg yolk paste: basin + water + powdered sugar (mix and melt) + oil + sifted low flour + corn starch + egg yolk → mix evenly.

Protein paste: egg white + salt + cream of tartar (you can also use it without) → medium-low setting of the egg mixer until the egg froze is not flowing (as shown in the picture).

Follow the previous step + sugar (add in batches) + vinegar → turn the egg beater from medium to high until it is hard to beat (as shown in the picture).

Add 1/3 of the egg whites into the egg yolk paste, mix evenly from the outside to the middle, then add all the egg yolk paste into the egg white paste and mix evenly. Line a baking sheet with oiled paper, pour the cake batter into it, smooth it out, and place it in the middle of a preheated oven at 150 degrees for about 20 minutes.
