Braised pork trotters
Overview
In the past, I used to cook pig's trotters in a pressure cooker with water. I love eating them, so let's try the more complicated pig's trotters

Wash the pig's trotters and put them into a pot of cold water with the lid open and boil for 3 minutes (don't cover the lid to remove the smell of pig hair), remove, wash and drain the water and set aside. Chop the onion, ginger, garlic, cinnamon, star anise and bay leaves and set aside

Put a little oil in the pot, boil the rock sugar, dissolve it into foam, stir-fry the pig's trotters until they change color

Soybean paste, light soy sauce, braised soy sauce, cooking wine, a little water, mix well, stir-fry until the sauce becomes fragrant

Add onions, ginger, garlic, cinnamon, star anise and bay leaves and stir-fry, add water to cover the pig's trotters and bring to a boil over low heat for an hour
