Steps

Mix 200 grams of flour and 2 grams of yeast powder, add purple sweet potato puree, knead with your hands while adding, add 10 grams of warm water, and knead into a smooth purple sweet potato dough.

Mix 200 grams of flour and 2 grams of yeast powder, slowly add 100 grams of warm water, stir with chopsticks while adding, and knead into a smooth white dough.

After the two colors of dough are kneaded, cover with a lid or plastic wrap and leave to ferment in a warm place until doubled in size.

Dip your index finger in flour and poke a hole in the middle. If the hole does not collapse or shrink back, or you can see that the inside of the dough has formed a honeycomb shape, it is ready to ferment.

Knead the fermented dough until the surface is smooth.

Roll out the white dough into a large piece and brush with vegetable oil.

Roll out the purple sweet potato dough into a large piece, spread it on the white dough sheet, brush it with a layer of oyster sauce, sprinkle some salt, thirteen spices, salt and pepper, chicken essence, spread an appropriate amount of mustard and minced meat, and roll it up.

Put it in a steamer covered with a drawer cloth, leaving a gap in the middle, because it will grow bigger when steaming. Let it rise for a second time for 20 minutes (adjust the rising time according to the temperature) until it doubles in size.
