Scrape the potatoes, clean them and cut them into thin strips, soak them in water for a while

Peel and mince garlic

Cut green and red pepper into thin strips and set aside

Add vegetable oil to a hot pan over low heat and sauté the minced garlic until fragrant (put half of the minced garlic)

Add the shredded potatoes and stir-fry slowly over medium heat. If they stick to the pan, add a small amount of water

Stir-fry until the shredded potatoes are almost cooked, add green and red pepper shreds, add an appropriate amount of salt and continue to stir-fry

Before serving, add white vinegar and remaining minced garlic and stir-fry evenly

Turn off the heat, add a little chicken essence and some sesame oil to taste
