Clean and cut the garlic into sections, cut the ginger and red pepper into shreds, beat the eggs into a bowl and beat evenly.

Heat oil in a pan, heat the oil to 60-70% heat, pour in the eggs, and fry over medium heat until both sides are golden brown. Use a spatula to cut into small pieces and set aside.

Pour a little more oil into the pot and stir-fry the peppercorns and shredded ginger until fragrant.
