Homemade Potato Roast Chicken
Overview
My brother is resting today and asked Mr. Lou to buy his favorite dishes early in the morning. Mr. Lou is very good and patient enough. Seeing him doing so well makes me happy from the bottom of my heart. My brother’s teeth are being straightened and he cannot eat many hard things, but he usually eats work meals at work, which is not nutritious, so he went to buy nine-yellow chicken and brought it back to cook with his favorite crayfish. After watching the show and doing errands, he came back to cook in a hurry

A fresh three-yellow chicken, buy it and freeze it for three to four hours, then marinate it with freshly squeezed ginger juice for seven or eight minutes

Chop the marinated chicken into even pieces

Bring water to a boil in a pot, add chicken pieces and blanch for about three minutes

Dried chili peppers cut into sections

Peel, wash and cut the ginger into pieces and set aside

Prepare peppercorns, star anise, cinnamon...

Remove the blanched chicken pieces, rinse the surface foam with warm water, drain and set aside

Have two cans of beer ready

Pour oil into the pot and when the fire is 70% hot, add ginger slices, peppercorns, star anise, cinnamon and dried chili and stir-fry until fragrant

Add chicken pieces and fry for two minutes

Pour the beer until the chicken pieces are covered

Pour in dark soy sauce, bring to a boil over high heat, skim off the foam

Add tomato paste and sugar, cover, turn to low heat and simmer for about 20-30 minutes

Wash and peel the potatoes, and prepare the green peppers. The thin ones are a little spicier. If you don't like spicy food, you can make them bigger. They can be used for decoration but not spicy

Cut the potatoes into even pieces

Wash the peppers and cut into small pieces

When more than one-third of the soup is left, add the chopped potatoes, cover and continue to simmer for about ten minutes
