Wash and peel lotus root and set aside

Wash the peeled lotus root slices with cold water and set aside

Cut peppers and carrots into slices and set aside

Chop the onion, ginger and garlic and set aside

Heat the oil in the pot, sauté the onion, ginger and garlic, add the lotus root slices and stir-fry, then add vinegar, salt and sugar and stir-fry, then add the carrot slices and chili slices and stir-fry until cooked, add a little chicken essence and serve.
