Add an appropriate amount of water to the pot, add chicken breast, green onions, ginger slices, Sichuan peppercorns and cooking wine. Bring to a boil over high heat, then turn down to low heat and cook until the chicken is cooked through and can be easily inserted with chopsticks.

Let the cooked chicken cool slightly and tear into thin shreds. Grate the cucumber and carrots and set aside.

Boil the vermicelli in water till soft.

Drain out the supercooled water and set aside.

Put shredded chicken, carrots and cucumber into a bowl.

Add vermicelli and salt and mix well.

Serve with salad dressing.
