Clean the clams. Put the washed clams into a pot and pour water to submerge the clams. Drain off the water. Rinse the clams that have fallen out of the water with clean water

Wash all the ingredients, peel the garlic, chop the ginger and dried chili, and cut the coriander and chives into sections

Heat oil in a pan, add garlic, dried chili pepper, and ginger, stir-fry until fragrant

Add the clams and stir-fry for a few minutes. Pour in the beer, cover the pot and simmer the wine. When it is almost dry, add salt, sugar, light soy sauce, dark soy sauce, oyster sauce, coriander, chives and chicken essence.
