Cut off the roots of enoki mushrooms, clean and drain.

Chop the garlic, add cooking wine, light soy sauce, sugar, water and dry starch in a bowl, stir well and set aside.

Pour oil into the pot, add minced garlic and stir-fry over low heat until garlic becomes fragrant.

Add chopped pepper and stir-fry for a while.

Pour in the prepared sauce and cook until thickened. Turn off the heat and set aside.

Line a baking sheet with tin foil, tear the enoki mushrooms into small bunches and place them on the tin foil, and pour the cooked soup into them.

Cover with tin foil, pinching tightly all around. Place in the preheated oven at 200 degrees for 15 minutes.

Remove and carefully tear off the tin foil.

Sprinkle in chopped chives.
