Slowly add water to the flour to form a slightly soft dough. After kneading it smooth, cover with a damp cloth and let it rest for 1 hour.

Put the onion, ginger, and Sichuan peppercorns into a bowl, pour in an appropriate amount of warm water, and soak for about 10 minutes.

After washing the beef shank, grind it into mince with a meat grinder.

Put the minced meat into a large bowl, add an appropriate amount of pepper water in batches, stir well after each addition, and then stir again until the meat filling is elastic.

Wash and mince the onions, add to the meat filling, and stir evenly.

Chop the carrots and add to the meat filling, mix well.

Add salt, oyster sauce and salad oil and mix well.

Take an appropriate amount of dough, roll it into long pieces, cut into pieces, roll it into a slightly thicker middle and thinner edge, and wrap it with an appropriate amount of dumpling filling.

Add water to the pot and bring to a boil. Add the dumplings. Do not move them. Cook for about 1 minute and then use chopsticks to gently stir the dumplings into pieces.
